Job Description

Must be able to prepare a range of sushi in a high volume restaurant. Ideal candidate has strong knife skills and a knowledge of sushi and Japanese cuisine.
  • Provide a positive, consistent leadership role model to hourly staff
  • Use check lists to ensure proper set-up and close down of each shift
  • Follow all company specifications and procedure to ensure perfect food
  • Follow and use all food safety procedures and logs
  • Follow all food rotation and re-stocking procedure using the FIFO (First In, First Out) method


  • High School diploma or equivalent is prefered
  • Graduate of a culinary institute, military school or formal on-the-job training preferred
  • Minimum of 2 year of food preparation experience required
  • Experience with quantity food preparation preferred
  • Demonstrate cooking skills and ability to follow established menus and recipes
  • Standing, bending, crawling, using hands to grasp, stoop, reach overhead, walk for 10-12 hours at a time
  • Lift objects up to 50 lbs
